I can't remember when I got this recipe but I do remember Mamma giving me the recipe.
It's been a treat for all of us this season because we've had such an excellent summer to grow the zucchini and find some different ways to cook and bake with the zucchini. I've made several batches already and I'm sure there will be more!
ZUCCHINI PANCAKES
Makes 2 dozen small pancakes
Low Medium Heat 2-3 minutes for each side
Serve with mayonnaise, favourite dip or salsa
1 cup flour
1 teaspoon baking powder
1 teaspoon seasoning
2 eggs beaten
1 clove garlic minced/crushed
4 cups grated zucchini
Olive Oil for low medium heat pan.
TIP: Temperature will vary with stove and pans so know thy heated pan and stove!
