It's pumpkin pie time! I like to make pumpkin tarts! Baking tarts only needs one temperature, no need to switch from hotter to hot. Occasionally we've grown our own pumpkin and used it for pie or tarts. Just clean out the pumpkin seeds and pulp, peel the shell then bake or steam the pumpkin flesh until it is soft. It's pumpkin pie time!
PUMPKIN PIE
Bake 10 minutes @ 450 F degrees
Reduce heat and bake 30 minutes @ 375 F degrees
1 pastry pie shell prepared for pumpkin filling (not baked)
1 ¼ cups pumpkin puree
1 cup milk
⅓ cup orange juice
1 teaspoon cinnamon
1 teaspoon ginger
2 eggs
1 cup brown sugar
1 teaspoon orange zest (optional)
Bake 10 minutes @ 450 F degrees
Reduce heat and bake 30 minutes @ 375 F degrees
Cool before serving with whipped cream or ice cream.
TIP: Bake tarts @ 375 F degrees for 20 minutes.

- In a bowl combine and mix pumpkin, milk, orange juice, cinnamon, ginger, eggs, brown sugar and zest.
- Pour mixture into pie shell and bake.
