This one is Michael’s birthday request but I think we all enjoy a good butter tart to celebrate any occasion. I usually make a Tex Mex to accompany this so I’ll follow this recipe with its partner. Happy Birthday Everyone!
BUTTER TARTS
Oven Temp @ 400 degrees F for 5 minutes and then 350 degrees F 10-15 minutes
Makes 2 ½ dozen large tarts
Grease muffin tins.
Prep pastry tart shells.
Roll out pastry, use circular cookie cutter to cut out shape, fold and manipulate pastry into muffin tin.
Refrigerate while making tart mix.
1 cup melted butter
4 eggs beaten
2 cups brown sugar
2 tablespoons white vinegar
2 teaspoons vanilla
1 cup corn syrup
In a bowl:
Remove from oven.
Let tarts cool about 5 minutes before removing from the muffin tin.
TIPS: It isn't necessary to grease muffin tins but I have found that it is a lot easier to remove tarts when they're done.
I like to bake the pastry@ 400 degrees for the first 5 minutes to set the pastry.

- Add brown sugar and mix.
- Add vinegar, vanilla and corn syrup.
- Add melted butter.
- Mix all ingredients well.
- Refrigerate 1 hour.
- Mix again before adding to pastry tarts shells.
