April has been a very long and busy month. Janna and Sam visited in March and we had tea and muffins one afternoon when she had to say good-bye to family and friends. Recently, Janna requested that I post this recipe.
BLUEBERRY OATMEAL MUFFINS
Oven Temp 375F
Baking time 30 minutes
12 large muffins
Grease muffin tin
1 cup buttermilk
1 cup milk
2 cups oats
1 cup oil
2 eggs
3 cups flour
1 cup sugar
2 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
1 ½ -2 cups blueberries
TIPS: Oatmeal must soak. Once the oatmeal has soaked the muffin mixture will be the right consistency to stack into muffin tin.

1 cup milk
2 cups oats
1 cup oil

1 ½ -2 cups blueberries
- Soak oats in buttermilk for 10 minutes
- In a bowl mix dry ingredients
- Add eggs and oil to wet oats mixture
- Add dry to wet
- Fold in blueberries
- Stack mixture into muffin tin and sprinkle additional oatmeal flakes onto muffins
- Bake for 30 minutes or until muffin top springs back
TIPS: Oatmeal must soak. Once the oatmeal has soaked the muffin mixture will be the right consistency to stack into muffin tin.
